Why weights change during cooking

Foods may lose moisture, absorb water, render or absorb fat, or lose solids into discarded liquid. Rice and pasta usually gain water; roasted meat often loses water and sometimes fat; fried foods may lose moisture while gaining fat. These changes alter grams and nutrient concentration per gram even when no ingredient is mysteriously creating or destroying all of the recipe's energy.

The matching rule

Use a raw database or label reference for a raw weight and a cooked reference for a cooked weight. Check details such as drained, skinless, boneless, baked, boiled, or fried. A raw chicken entry applied to cooked chicken grams can over- or underestimate the amount because the cooked portion represents a different starting weight.

When the package label is the source

Read whether the serving describes the product as packaged or as prepared. Dry pasta, rice mixes, oatmeal, and powdered products may include preparation instructions or an additional prepared column. Do not use the dry serving grams as though they were the cooked bowl weight unless the label explicitly supplies that conversion.

Use whole-recipe math for a batch

Calculate the ingredients on their documented basis, total the recipe, and weigh the finished edible batch. Divide the whole-recipe calories by cooked batch grams to obtain an estimated cooked calorie density. This preserves the total while accounting for the batch's actual water-related yield more directly than a generic raw-to-cooked multiplier.

Handle meat, bones, skin, and draining

Record edible portion rather than bones or packaging. Note whether skin was eaten and whether rendered fat or cooking liquid was discarded. USDA portion weights generally refer to edible material, but food descriptions and data types differ. If the consumed state does not match a database entry cleanly, state the assumption instead of silently switching bases.

Recognize the remaining limits

Cooking can affect nutrient retention as well as weight, especially for some vitamins and minerals. Generic yield factors describe reference preparations, not every kitchen. For routine calorie tracking, consistently matching the measured state is often more valuable than chasing a universal conversion ratio that does not exist.
