What this corpus was built from
FNDDS provides nutrient profiles for foods reported in What We Eat in America, the dietary component of NHANES. USDA says its nutrient profiles represent generic foods and its portion gram weights are estimates for groups of foods; they may not represent every size or specific product.
That makes these records valuable comparison points. It does not turn them into measurements of an unseen plate. Use a current label for a packaged product and weighed ingredients plus finished yield for a recipe when those are available.
